Ingredients
4 large bell peppers, tops cut off and seeded
1 lb lean ground turkey
1 cup cooked brown rice or quinoa
1 onion, diced
2 cloves garlic, minced
1 can diced tomatoes, drained
1/2 cup shredded low-fat cheese
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
Olive oil for cooking
Instructions
Preheat Oven: Preheat the oven to 375°F (190°C).
Cook Turkey: In a skillet, heat a bit of olive oil. Cook ground turkey with onion and garlic until the turkey is browned.
Prepare Filling: Add cooked brown rice/quinoa, diced tomatoes, cumin, paprika, salt, and pepper to the turkey mixture. Cook for a few more minutes.
